The history of the hazelnut
Hazelnut is the fruit of the hazelnut (corylus avellana) already cultivated in antiquity. At the time of
Ancient Rome it was customary to donate corylus avellana plants to wish happiness. The hazelnut is mainly used in the confectionery sector in the form of toasted hazelnuts, grains, manteca, hazelnut flour. Its oil (cold pressed) is also highly sought after and is used both in the cosmetic and food industries.
In the food sector it is usually used raw, to dress salads or other foods.
Possibly emulsifying it with lemon juice to obtain a vinaigrette.
